Ingredients · 4 servings
- 300 g shrimp, peeled and deveined
- 200 g clams, cleaned
- 200 g mussels, cleaned
- 300 g short-grain rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 100 ml olive oil
- 1 liter fish or seafood stock
- 1 tomato, diced
- Salt and pepper to taste
- Fresh coriander for garnish
Method
- Heat the olive oil in a large pot over medium heat.
- Sauté the onion and garlic until translucent.
- Add the diced tomato and cook for a few minutes until soft.
- Stir in the rice and cook for a couple of minutes until slightly translucent.
- Pour in the fish stock and bring to a boil.
- Add the shrimp, clams, and mussels to the pot.
- Season with salt and pepper, then reduce the heat to low and cover.
- Cook for about 15 minutes or until the rice is tender and the seafood is cooked through.
- Remove from heat and let it rest for a few minutes before serving.
- Garnish with fresh coriander before enjoying.
